Walnut cake
A modest cake for the birthday brother. Very nutty flavor.

Ingredients

  • Chicken egg

    4 piece

  • Sugar

    2 cup

  • Walnuts

    300 g

  • Flour

    2 Tbsp

  • Starch

    2 Tbsp

  • Leavening agent

    2 tsp

  • Vanilla sugar

    2 pack

  • Gelatin

    10 g

  • Milk

    250 ml

  • Semolina

    0.4 cup

  • Cream

    200 ml

  • Lemon peel

    1 tsp

Lay a few nuts for decoration.

The rest of the grind so that you and peanut flour, and pieces the size of a pea.

1 egg, 3 protein, lightly beat with 1/2 Cup sugar, vanilla sugar and a pinch of salt.

Add first the flour with starch and baking powder, then nuts.

The bottom of the form (I had a D 22cm) vystelit paper for baking.

Put the dough. Put in a preheated 200 gr oven for 20-25 minutes (all very individual and depends on the plate). Readiness check wand. The oven off, crack door and cool cake until warm. Then remove the cake from the mold and cool completely.

Cut into 2-3-4 part (the more layers, the more succulent the cake).

Milk pour into a small saucepan, pour the sugar and vanilla, bring to a boil. In a thin stream with continuous rapid stirring, pour the semolina. Cook on low heat for about 1-2 minutes. Should be thick semolina.

Yolks slightly beat with a mixer and stir in them (also with a mixer), three hot porridge. The bowl cover to the top does not dry out, and leave to cool (if you don't like the texture of semolina, then everything is still and grind in a blender).

Heavy cream, beat until rigid peaks. In cream put 2 tablespoons of the cooled semolina and whisk. Stir in grated lemon zest.

The cream turns thick. I was making a cake "exit", so I fixed it with gelatin (10 g gelatin soaked in 3 tbsp cold water, after 10 minutes, dilute it in a water bath and add to the cream).

Put the cake together.

Put the first cake on a dish and make it into a ring cake. Spread on top 1/2 of the cream and chill for 20 minutes.

Spread the second cake, top with cream, cover with the last cake layer and chill for 1-2 hours

Remove the ring from the cake. That's what happened.

Decoration. Whisk the cream with sugar and grease the top of the cake and coat the sides with ganache.

I didn't know what to decorate the cake, so decorating ideas come on the fly. Knead the yellow fondant and make the edge of the cake (like the sunflower, but not enough of the postmark and the time for clearing), so the edge is bent and fixed with a napkin.

Shred the chocolate and sprinkle the top of the cake. Of whipped cream using a pastry syringe, squeezing a few outlets (planned 12, but only put 8).

Nuts was planning to just put on the cream outlet, but came up with the idea with ladybugs: red postmark, cut out circles and put them on half a walnut. A toothpick pushed through the middle, and point - of chopped chocolate. And put them on the cream outlet.
