Salad of root vegetables in a spicy marinade
Raw salads are extremely healthy, as the products not subjected to further processing, retain all the necessary body substances. Hearty and fresh salad, easy to prepare. The highlight of the salad lies in a method of dicing (fine chopping) and a spicy, piquant dressing.

Ingredients

  • Beets

    1 piece

  • Celery root

  • Carrots

    1 piece

  • Pumpkin

  • Zira

    1 tsp

  • Fennel

    1 tsp

  • Mustard

    1 tsp

  • Coriander

    1.5 tsp

  • Sugar

    1.5 tsp

  • Olive oil

    3 Tbsp

  • Soy sauce

    3 Tbsp

  • Lemon juice

    1 Tbsp

Prepare a hot marinade of Spices and Pat dry on a dry pan, crush in a mortar. In a small saucepan, pour 200 ml. water, heat, add sugar, spices, olive oil, bring to a boil.

Hot marinade add the lemon juice and soy sauce.

Vegetables wash, peel, grate on a fine grater-shredder (bernatowska grater for Korean Mochovce), stir, pour hot dressing-marinade, stir again. Let the salad cool down, better yet give the salad to brew for a day in the fridge.

Simple, but very delicious salad of juicy, seasonal, RAW vegetables, diversify your Lenten table. Root vegetables retain their nutritional value almost until the next harvest, especially beets.
