Warm salad with rice Mediterranean
This light, refreshing but filling salad-style Mediterranean cuisine may be enjoyed as snacks for lunch or to replace dinner on fast days. Try it ;)

Ingredients

  • Figure

    125 g

  • Pepper

    1 piece

  • Tomato

    2 piece

  • Olives

    1 handful

  • Greens

    1 Tbsp

  • Garlic

    2 tooth

  • Lemon juice

    2 Tbsp

  • Olive oil

    2 Tbsp

  • Salt

  • Parsley

Cooking

I used basmati rice Gold TM Mistral.

Boil the rice until tender, as directed on package, cool down a bit.

For dressing mix olive oil, lemon juice and chopped garlic.

Chop the tomatoes and pepper, add to rice, mix well.

Add the chopped olives and chopped herbs, mix well.

Pour dressing, mix well.

Salad spread on plates/cups and serve, garnished with sprig of parsley.
