A cupcake with a ricotta and coffee
Incredibly flavorful cupcake!!! The intensity of flavor and aroma it reminded me of "Baba". Moderately sweet, quite moist. It is possible to decorate according to your taste, of course. I got 12 cupcakes in the shape, with the bottom diameter 5 cm

Ingredients

  • Butter

    100 g

  • Sugar

    120 g

  • Ricotta

    250 g

  • Chicken egg

    2 piece

  • Cognac

    70 ml

  • Instant coffee

    2 tsp

  • Flour

    200 g

  • Leavening agent

    10 g

Cooking

Dissolve coffee in brandy (whiskey or Amaretto). The softened butter vzbit with sugar until white and fluffy. One by one add the eggs, continuing to whisk.

Add the Ricotta and mix well on slow speed or with a spatula just until smooth.

Sift the flour with the baking powder and in a few receptions to add to the dough (it may take more or less, see the consistency!- the consistency of thick cream),

Add the cognac with the coffee and stir.

In the form of cupcakes to put capsules and fill them 3/4 full.

Bake at 180 degrees for about 20-25 minutes (check for the splinter).

The structure is quite porous and slightly moist.

Decorate according to your wish. It can be powder, chocolate, or other icing, just melted chocolate. Be creative!!!
