Cooking
Wash well the meat, dry it with paper towels, remove all the unnecessary film. Squeeze orange juice and grate the peel of an orange.
All the dry ingredients for the marinade grind. I did it in my grandmother's mortar of a century ago. Cut onion into small cubes. Combine juice, zest, butter and dry ingredients with onion. We mix it all together. Take the sleeve, put the meat and marinade. Carefully distribute the marinade with spices for meat.
Pack sleeve, tightly securing the two ends. You can and cling film to wrap the meat.
On top wrap tight in foil and send the meat in the refrigerator for 12 hours, even marinated properly.
12 hours later disclosed the meat. Preheat the oven to 180 degrees. The meat in foil, closed, put into the oven and bake for 15-20 minutes. Then, open the foil bake the meat, pouring videowise juice, another 30 minutes. You must rely on your oven, so as not to overdry meat.
