Cooking
You can use cornmeal. I ground the corn in a blender and sieved.
To separate the protein from the yolk. Mix cornmeal, flour, sugar, baking powder and yolk. Pour the whey and mix thoroughly.
Whisk the protein to the peaks.
In the dough add the cherries (if using frozen berries, defrost beforehand), vanilla sugar and cinnamon. Gently stir beaten egg white and mix well. Form of grease with butter and sprinkle semolina, pour into it the dough.
Bake the cake in a preheated 180 degree oven for 45-50 minutes.
