My eclairs
tried many recipes, but settled on this.

Ingredients

  • Water

    300 ml

  • Margarine

    60 g

  • Vanilla

    1 pack

  • Salt

  • Flour

    175 g

  • Chicken egg

    3 piece

  • Cream

    600 ml

  • Sugar

    200 g

  • Sour cream

    5 l

  • Instant coffee

    1.5 tsp

  • Dark chocolate

    100 g

  • Alcohol

    1 tsp

Cooking

Boil water with margarine and vanilla, when it begins to boil, reduce heat. Add flour and knead well until until the dough will not disappear from the bottom.

When the dough has cooled, take the eggs at room temperature and knock one by one, after each well RUB the dough, I always take three eggs.

Press out the dough on a baking sheet pastry bag or a spoon. The pan can be covered with baking paper.

Bake at 200 gr. 20-25 minutes, ready to cool and fill cream. Cream: beat cream with sugar 10 minutes add sour cream, whisk for another 5 minutes, then add the binder and stir until then, until thickened (do not interrupt, and then the cream is removed).

Glaze: heat the cream with the coffee, stir, add chocolate, stir to dissolve the chocolate. Cool, dip the eclairs and eat!
