Sicilian cookies
Pinoli (Pignoli) - Sicilian cookies, are also popular throughout southern Italy. Is made of almond paste with the addition of pine nuts. From the outside it crispy and the inside soft spongy middle. Very nacisnij nutty flavor with the bright note of cedar nuts - delicious! :)

Ingredients

  • Almonds

    2 cup

  • Sugar

    0.5 cup

  • Powdered sugar

    1 cup

  • Egg white

    3 piece

  • Pine nuts

    0.5 cup

Cooking

In the bowl of a food processor, connect the almonds and sugar. Beat about 4 minutes to severe grinding.

Add the powdered sugar and proteins. Whisk again until smooth dough.

Preheat the oven to 150 degrees. Line a rimmed baking sheet with baking paper and lightly grease paper. From a teaspoon of dough roll into a ball, smash a bit and dip it in the pine nuts.

Place on a baking sheet at a distance of 2-3 cm from each other. I got 2 baking trays.

Bake for 25 minutes until Golden brown. Leave in pan for 5 minutes and then put on the grill until cool.
