Meat with eggplant
Juicy meat with eggplant from Nicky Belotserkovsky and mix parboiled and wild rice on the side. If you take lean pork or veal, the dish is almost diet (for those who wants to lose weight). A mixture of parboiled and wild rice on the side, further reducing the caloric content of this dish.

Ingredients

    300 g

  • Eggplant

    1 piece

  • Onion

    1 piece

  • Tomato

    1 piece

  • Tomatoes in own juice

    100 g

  • Garlic

    1 tooth

  • Olive oil

    2 Tbsp

  • Thyme

    0.25 tsp

  • Zira

    0.25 tsp

  • Salt

  • Black pepper

  • Cilantro

Cooking

Take the rice bags bubble Mix from "Mistral".

Put in boiling water and cook according to instructions 30 minutes.

While cooking the rice, cook the meat with eggplant. Cut into bars eggplant, diced tomato and onion, finely chop garlic.

Take the meat: lean pork or veal and cut across the grain strips.

Heat the pan, pour olive oil, put the onion, garlic and thyme (or a sprig of fresh, I dried). Fry for one minute.

Put the meat and fry until it will turn brown in 5 minutes.

Put sliced tomato and tomatoes in their own juice. Stir.

Add the eggplant.

Add salt, freshly ground black pepper, cumin. Stir. If it's too thick, you can pour 2 tablespoons of water.

Simmer with the lid closed on low heat for 15 minutes.

Ready rice in a bag, take out the plug and drain the water.

The bag is torn off the edge, put rice on a dish. I used a serving ring.
