On one social site my mom constantly sends me messages with different recipes, save them that way for myself)) That's where I got the recipe, slightly changed it for yourself and prepared. There are similar, but the technology of preparation varies. Welcome to the table!

Cooking
Wash the eggplant and cut into strips
Put them in a bowl and season with salt. Leave it for 15 minutes
Eggs boil, cool and cut into cubes
Onion cut into half rings
Put onions in a bowl, separating the feathers and add sugar, vinegar and boiling water. Leave it to marinate for 10 minutes (the original is recommended before marinating onions even scalded with boiling water and leave it for another couple of minutes, I skipped this step)
In skillet, heat vegetable oil and fry the aubergines for 10 minutes, stirring from time to time
Spread the eggplant on a napkin to soak up excess fat and leave it to cool
Collect salad. In a salad bowl lay out the sliced eggs, pickled onions (pre-drain the marinade and squeeze the onions well)
Serve, if desired, can decorate with greens or just greens pomelit there
Additional lightly solting salad does not require, for me it pretty harmonious taste
