Overseas-eggplant
Spied this recipe from a French chef on the website. Excellent eggs : a little work, but the taste is excellent.

Ingredients

  • Eggplant

    4 piece

  • Pepper

    2 piece

  • Onion

    2 piece

  • Olive oil

  • Garlic

  • Salt

  • Allspice

  • Adjika

Eggplant wash, cut in half, to make cuts and lay out on a baking sheet

Pepper wash, peel, cut into strips and lay on top of eggplant

Onion peel and cut into half rings, put on top of peppers and eggplant

Season with salt and pepper, drizzle with olive oil and add dry spices. I have a Provencal blend: Origen, Basil, thyme. Send all in a hot oven for 40-50 minutes temperature 200C

When ready, spoon to scrape the skins from the pulp and other vegetables. Pass through a blender. Here you can add garlic, seasoning, salt, pepper. All according to your taste.
