First tried to cook a pizza with eggplant. It turned out - very nice.

Cooking
For the dough, in a glass of warm water to dissolve yeast.
And sifted flour enough to make soft dough, to not stuck to the hands. I added, first, in a bowl, then kneaded on the table and added flour as needed, until no longer sticks to the hands. Knead the dough for 10 minutes, then put them back in the bowl and leave in a warm place to rise.
While the dough rises, make filling. Eggplant cut into triangles, fry in vegetable oil (you may want to soak the eggplant in salted cold water, but I didn't do it, I like their bitterness).
Add onion - straws. Fry together for a few minutes.
Add the peppers, cut into strips.
Salt, pepper - to taste. Add the thyme and balsamic vinegar.
Smoked meat (brisket, bacon), cut into slices.
The dough came. Abenaim it, and oiled hands on oiled baking sheet, form the tortilla pizza.
Sprinkle over half of grated cheese.
And sprinkle with remaining cheese.
Bake in a preheated 190 degrees oven 20-25 minutes, until tender basis.
