Meatballs in Spanish vegetable sauce
Albondigas a la jardinera - another version of Spanish meat meatballs, now in vegetable sauce. They are very fragrant, homemade and cozy! Preparation is very easy. For best results, use homemade beef.

Ingredients

  • Minced meat

    400 g

  • Chicken egg

    1 piece

  • Baton

    1 slice

  • Milk

    100 ml

  • Onion

    1 piece

  • Carrots

    1 piece

  • Leeks

    1 piece

  • Green peas

    100 g

  • Mushrooms

    100 g

  • Dry white wine

    100 ml

  • Flour

    1 Tbsp

  • Olive oil

  • Salt

  • The mixture of peppers

  • Parsley

Cooking

Soak a piece of bread in milk.

Mix mince with egg, salt, pepper, parsley and soaked bread.

To form the meatballs, roll in flour. Fry in oil, lay on paper towel.

Carrots cut into cubes along with the peas boil for 10 minutes. I had a couple of artichokes frozen, I boiled them.

Chop onion, leek and pepper and fry in oil.

Add the mushrooms and a spoonful of flour.

Add a little vegetable broth.

Add meatballs and carrots with peas.

Add the wine and simmer for 10 -12 minutes.

Submit meatballs with sauce and fried potatoes, garnish with parsley.
