Today there are many recipes for pork loin as homemade and purchased. But this taste I never met ever. I think the secret is embedded in the two spices are cloves and cinnamon.

Cooking
To prepare the loin - wash and dry. It can be such pieces as I have or in a roll. Spice mix, raw carrots cut into thin slices, garlic as well.
Brisket RUB some salt (I do not regret salt), spices. In the center lay the carrots and garlic. Fold the two pieces together and tie with cooking string. With a knife make deep cuts and lard remaining garlic, juniper berries.
The resulting piece to wrap tightly in plastic wrap and then in two packages. Squeeze the air out of the packages and again tie. This is the option for boiling, if you decide to bake it in the oven, then wrap in foil.
Put in a saucepan (I have a cauldron-shaped and very comfortable), fill with water and to fire. After boiling, reduce the flame to low and cook for approximately 2.5 hours. If baked, the time is approximately the same.
When the meat is ready - take out the dish, remove all the packages and allow it to cool. I took to the balcony, and there it well cold.
Cold loin remove the thread and finely chop. Store in foil in the freezer.
