Beet salad, feta and kiwi
Offer a recipe of salad of roasted beets: it is healthier than boiled. I baked the beets in foil in the oven when baking bread. Due to this method of heat treatment it will remain much more vitamins and minerals. From the roasted beets, the taste is incomparable, not comparable to boiled. Salad tender, slightly sour kiwi.

Ingredients

  • Beets

    100 g

  • Feta

    40 g

  • Parsley

    2 sprig

  • Kiwi

    0.5 piece

  • Mustard

    0.25 tsp

  • Vinegar

    1 tsp

  • Olive oil

    3 tsp

  • Salt

  • Black pepper

Meanwhile, make the sauce. Mustard, olive oil, red wine vinegar, salt and black pepper, mix (beat) in a jar until emulsified.

To beet all of the nutrients, the tail, the tops and the skin is not cut. Rinse well under running water, wrap tightly with foil. Bake beets at a temperature of 200 degrees, about 1-1. 5 hours - large tubers, medium - 40 min.. the readiness of the beet, you can check out, pierced it with a toothpick.

Beets peel and cut into small cubes. Feta and kiwi cut into cubes.
