Beet caviar with celery
I wanted something new from beets, that's got such a crazy vegetable, but my husband liked it.

Ingredients

  • Water

    300 ml

  • Tomato paste

    3 Tbsp

  • Sweet pepper

    100 g

  • Sorrel

    300 g

  • Onion

    4 piece

  • Celery root

    500 g

  • Beets

    1 kg

  • Salt

  • Black pepper

  • Garlic

    4 tooth

  • Vegetable oil

    4 Tbsp

Cooking

Onions and celery peel and wash the beets clean, cut all vegetables into finely dice.

In a hot frying pan pour vegetable oil, browned the onions, put the celery, stir, cover and simmer on medium heat for 10 minutes (stir occasionally)

In podtochennaya vegetables add the tomato paste and water, stir, cover and simmer for 10 minutes.

Now came the turn of the beets (if beets aren't sweet, add 1-2 tsp of sugar), stir, add salt, pepper, cover and simmer 10 minutes.

Add the sorrel and sweet pepper, stir and simmer under the lid for another 15-20 minutes.

For a couple of minutes until cooked add the chopped garlic, stir, try the salt - pepper, cover and turn off the gas. Serve cold - it tastes better.
