Salad
We have spring in full force in may. Until this nettle not been found. Well, perhaps only some warm and Sunny places. I am the herbalist and the long-awaited emergence may nettle for the collection, drying and pickling. I wait for that time when you can harvest nettles and goutweed for the future. 8 may we in Estonia had a holiday - mother's Day. I had a short work day. I went for the first green for the salad. This salad I made on the holiday (evening).

Ingredients

  • Nettle

    30 g

  • Greens

    30 g

  • Dill

    30 g

  • Ramsons

    50 g

  • Cucumber

    120 g

  • Cabbage

    150 g

  • Parsley

    30 g

  • Chicken egg

    4 piece

  • Pepper

    200 g

  • Sour cream

    400 g

  • Salt

Many, of course, seem strange, that I just remembered about spring. But in those clean places where I usually collect herbs, even the old, yellow and dry grass. Nettles in some places it seemed just that. In my yard on birch trees the leaves are green on 9 may.

In this salad you can optionally add chicken. But I got a spring salad, without meat.

All the ingredients for the salad. Nettle, goutweed, carrots, cucumber, parsley, garlic, pepper, eggs, dill.

Remove wash and put in salted water, while preparing other greens.

Nettle to wash and fill with hot water. The water immediately drained.

Chop the goutweed and nettle.

Slice the garlic and cabbage.

Cucumber and pepper.

Parsley and dill.

Chop the eggs.

Chop the onion.

Add salt and sour cream.

Sort them into bowls and give a festive look.
