Cooking
Cut off the tomato caps and spoon out the pulp and seeds. Sprinkle with salt and pepper inside of tomatoes.
In a pan heat the butter and oil and fry the finely chopped onion, garlic and petiolar celery. When the vegetables are soft, add the tomato pulp and simmer on low heat for 10 minutes. Sprinkle with salt and pepper to taste. You can add chopped Basil. Leave the pan to cool.
When the sauce has cooled, add mayonnaise, stir with a blender until smooth and put in the fridge for 30 minutes.
Boil the eggs and clean the shell.
Take the prepared tomatoes and put inside of each spoon sauce on top of the inserted peeled boiled eggs. On the edge of the tomato pour more sauce, decorate with greens.
