Sweet and sour zucchini

  • Zucchini

  • Olive oil

  • Vinegar

    3 Tbsp

  • Canned fish

    1 can

  • Pine nuts

    3 Tbsp

  • Raisins

    30 g

  • Spices

  • Parsley

Zucchini (took half green and yellow) cut into thin strips. Garlic finely chop and fry 1 minute in oil, add strips of zucchini. With constant stirring fry until they begin to "gold".

Then add vinegar and water, cover with a lid and simmer for 7-8 minutes. At this time, drain the liquid/oil from the canned fish mash with a fork (I had tuna). Ready zucchini, add nuts, raisins and the fish, gently stir and after a couple of minutes remove from heat. Sprinkle with salt and pepper to taste.
