I love coconut cakes unlike the walnut. This cookie was no exception, although the coconut is almost not felt. The top is crisp and inside tender crumbly structure. And the carrots gave a very interesting note and beautiful "pretended to be" dried apricots.

Cooking
Our ingredients are.
Butter, brown sugar from the Mistral, egg and carrots; beat with a mixer. In another bowl mix the flour, coke, chips and baking powder. All combine and gently stir, knead the dough.
Baking tray lay a baking paper and spread a teaspoon of the dough at a distance from each other. And you can roll a small balls like a walnut, spread out and press.
Bake at t=180 for about 15 min..
