Cooking
For the preparation of cheese you need: -Cheese-300 gr Orange-1 piece -Chocolate-150 g Almonds-30-50 g -Starch-0,5 tbsp Sugar-30 g -Sugar powder-2 tbsp -sour Cream-2 tbsp
Almond pour boiling water and leave for an hour.
For the confit: RUB the orange zest. Orange wedges; remove the membranes, squeeze the juice and add the pulp. Zest, pulp, juice, sugar and half of the chopped almonds to send to oven, cook until the sugar is dissolved, stirring constantly.
Starch diluted in a little water and add to the orange syrup. Cook over low heat until thick mixture. Confit is ready remove from heat, cool to room temperature and put into the refrigerator.
Curd RUB through a sieve or using a blender.
Add sour cream, powdered sugar, remaining chopped almonds, mix well.
Chocolate melt in a water bath, a brush to grease silicone molds, place in refrigerator. When the chocolate hardens, repeat the procedure again. Chocolate baskets ready to fill with 1/3 orange confit, put the cheese, flatten.
Pour on top of all the chocolate and put it in the refrigerator to solidify.
The cheese is ready to decorate to taste.
