Very exquisite salad (or dessert), ideal to cool white wine or champagne. Dish for a bachelorette party or a romantic dinner.

Cooking
For this salad-dessert it is better to use a little unripe peaches. Cut the peach into 2 halves, remove the seeds and cut into thin slices
The pan pour the wine, add sugar (I had brown sugar "Mistral") and cinnamon, bring to boil
In this spicy wine drop the sliced peaches and cook 30 seconds
Remove the peaches from the wine and cool. Sliced peaches to lay ryadochek overlap each other and then fold rolls, turn the rosette.
In a portion bowl put sliced pieces of blue cheese and the rosette of peach
The remaining spiced wine to evaporate to syrup and pour over the salad
Garnish with Basil leaves and serve
