Vegetable stew in French
Delicious and easy stew!

Ingredients

  • Eggplant

    2 piece

  • Zucchini

    2 piece

  • Onion

    2 piece

  • Pepper

    2 piece

  • Tomato

    3 piece

  • Vegetable oil

    150 g

  • Parsley

    1 coup

  • Coriander

    1 Tbsp

  • Salt

  • Black pepper

  • Spices

Cooking

Zucchini and eggplant cut into cubes of medium size, add salt, mix well.

Place them in a colander.

Press down with plate with weight and leave for 30 minutes to release bitter juices.

Onions cut into rings.

Fry in vegetable oil until slightly Golden (минут5).

Add zucchini and eggplant, Bulgarian pepper cut into small squares, the chopped herbs, mix well and saute for 5 minutes.

Then add coriander seeds, salt, pepper, spices, stir again, simmer for another 5 minutes.

Then add tomatoes, peeled from the skin and diced.

Mix well.

Simmer, covered, until tender, 10 minutes on small fire.
