Cooking
For the marinade, squeeze out 1/4 part orange juice.
Add the shredded zest (a bit - I literally 5 inches peel cut off).
Vinegar, olive oil and a little salt - to taste.
Shrimp will thaw, peel and cut first along (to easily remove the intestinal vein), and then across. Put the shrimp in the marinade, mix and leave for 30 minutes.
Meanwhile, boil in plenty of lightly salted water Fig. I love that it was not soft, but slightly felt in the teeth ("al dente", that is "to the tooth"). Rice wash well with cold water (not stuck together) and also give this water to drain (I do this in a colander with small holes).
