We will need this.
Eggplants cut not thin strips, put in a colander, salt and let stand 0.5 hour. Then rinse under running water. Salt to taste, do not need much - the eggplant can absorb the salt.
Chicken cut into strips or disassemble the fibers (I cut). Potatoes chop into thin slices.
Onions cut into wide half-rings (small onion rings)
fry in vegetable oil, add eggplant, fry until cooked, stirring occasionally.
In the end, add a little ground black pepper, finely chopped garlic, chicken. Still slightly warm.
Potatoes a little salt, drizzle with vegetable oil, to fry (I fried in a convection oven, it does not need much oil. You can fry a convenient way for you). At the end of cooking to add spices or seasoning to taste (I had dried herbes de Provence).
Add the potatoes to the eggplant, mix gently.
The finished dish sprinkle with pine nuts
or sesame seeds. You can serve it both hot and cold (for my taste better cold).
