Salad of potatoes with eggplant
Summer, August! Time vegetables! I want them to eat as much as possible! Offer You the vegetable salad. Very tasty and hearty! Easy to cook! I highly recommend to try this salad! Hope You like it!

Ingredients

  • Eggplant

    1 piece

  • Potatoes

    1 piece

  • Tomato

    1 piece

  • Pepper

    1 piece

  • Onion

    1 piece

  • Dill

  • Parsley

  • Vegetable oil

    3 Tbsp

  • Lemon juice

    1 tsp

  • Salt

  • Black pepper

  • Garlic

Our vegetables! The potato is already cooked.

Potatoes wash, boil in their skins. Then cool, clean. Cut into cubes.

Tomatoes pour over boiling water. Peel and finely chop.

Eggplant clean, cut into thin slices, sprinkle with salt and leave for 15 minutes to eliminate the bitterness. The resulting juice is drained.

Prepared eggplant to put in a pan with hot oil and fry on both sides. Spread on a napkin.

Sweet pepper peel, wash, cut into strips.

Onion peel and chop.

Parsley and dill wash, dry and finely chop.

Prepare the filling: 3 tbsp vegetable oil combine with the lemon juice and mix well.

Put in a bowl the diced potatoes, slices of tomatoes, slices of eggplant, strips of sweet pepper and chopped onion. Mix well.

Water the vegetables with the dressing. Sprinkle with chopped herbs. Add salt to taste and pepper. You can add to a salad of chopped garlic.
