Bean salad with roasted vegetables
Very delicious and light salad, perfect for grinnemo meat.

Ingredients

  • Green beans

    250 g

  • Onion

    1 piece

  • Eggplant

    1 piece

  • Pepper

    4 piece

  • Garlic

    1 tooth

  • Pomegranate juice

    4 Tbsp

  • Salt

  • Peppers red hot chilli

  • Black pepper

  • Olive oil

    3 Tbsp

  • Parsley

Cook the beans. Beans can take green beans or beans.

Bake eggplant and peppers. Poke eggplant with a knife. I baked it for about 45 minutes at temp.200 deg.

Chop the onion half rings and marinated it in pomegranate juice If there is such a juice, then the lemon juice. Finely chop the garlic.

Mix onions and garlic with the warm beans.

From eggplant to remove the skin and cut into stripes.

From pepper to remove skin and cut into stripes. Salt and pepper to taste. As to taste, add the parsley and season with oil.
