Scottish Christmas Cupcake
The Scottish Housewives prepare this cake for a long time before the holiday, stand for up to six months. To store this cupcake in a cool place. Traditionally, there is added the alcohol, but I didn't. And slightly changed the composition of the dough:)

Ingredients

  • Black pepper

    0.25 tsp

  • Ginger

    0.5 tsp

  • Almonds

    70 g

  • Cranberry

    50 g

  • Sugar

    70 g

  • Cinnamon

    0.5 tsp

  • Yogurt

    50 ml

  • Chicken egg

    2 piece

  • Butter

    150 g

  • Raisins

    100 g

  • Candied

    50 g

  • Black currants

    250 g

  • Flour

    250 g

Cooking

Mix the sugar with the egg and oil

Add the flour, cinnamon, and knead the dough. Put in plastic wrap and refrigerate for 30 minutes.

Meanwhile, in the pre-thawed currants add 70 g of flour, finely ground almonds, ginger, cinnamon, black pepper, mix well.

Dried fruits and a bit of chopped almonds mix together. Raisins also better to rinse with hot water

Whisk one egg with sugar and add 50 ml of kefir

Divide the dough in two, roll out, put into a form and add our berries and nuts. Pour kefir mixture.

Close the cupcake a second layer of dough and send in the oven for about an hour. The finished cake to decorate with currants and powdered sugar
