Cooking
Collect the necessary products.
The yolks separated from the proteins and grind them with sugar. Proteins put into the fridge.
Remove the zest from lemons and sent it to the yolk mass. Press out the lemon juice through a strainer.
Add softened butter and continue whisking.
Add the flour and continue whisking on low speed of mixer.
Get proteins from the refrigerator and whisk them until stable peaks.
Add them to our dough in several stages. Gently stir with a silicone spatula in a circle and from the sides to the center, as if folding an envelope.
Add raspberries and gently mix evenly in the dough.
Jars grease with butter and spread the dough, not end up filling the banks, as during baking it rises. Sent the jars on a steam bath in pre-heated to 180 degrees oven (or double boiler) for 45 minutes.
