Lahug - Yemeni flatbread
I decided and my mother-in-law to cook this dish - and I also filmed and recorded the recipe. I hope you will like it.

Ingredients

  • Flour

    1 kg

  • Yeast

    4 Tbsp

  • Sugar

    3 Tbsp

  • Salt

    1 tsp

  • Leavening agent

    10 g

  • Semolina

    3 Tbsp

  • Water

    3 cup

Cook not cool semolina 1 Cup water and semolina.

In a large bowl, mix the flour, yeast, sugar, salt and baking powder.

Add semolina, stir and gradually add the remaining water during mixing.The dough should be liquid, as for pancakes. Leave the dough for about half an hour.

Grease with vegetable oil a medium size frying pan. Draught pour spoonful of batter and fry on one side under the lid over medium heat until cooked dough on top.

Here are the "pancakes" served with pureed tomatoes, seasoned with salt, paprika and Shug (or harrisii), and boiled eggs. Bon appetit!!!!!!!!
