Eggplant rolls stuffed with vegetables and cheese
Love eggplants in any form. Presented in recipe appetizer is one of my favorite dishes. Perfect for a holiday table or just for dinner. Cooking is very simple.

Ingredients

  • Eggplant

    3 piece

  • Onion

    2 piece

  • Carrots

    2 piece

  • Pepper

    1 piece

  • Tomato

    2 piece

  • Cheese

    150 g

  • Mayonnaise

  • Vegetable oil

So, prepare the necessary products. Onions, carrots, and tomatoes I was small, so I took 2 pieces If you have vegetables large, grab 1 PC.

Eggplant cut into plates lengthwise, sprinkle with salt and leave for 15-20 minutes. Drain off the resulting liquid.

How to fry a little, add carrots, grated on a grater. Do not forget to stir.

And five minutes later the tomatoes (to remove skins, cut into cubes). Salt to taste, spices (mine is black pepper, paprika, Chile). Cook for another 7-10 minutes, turn it off. Ready.
