If coconut you still be able to break, you can not only cook, but also to make the dessert "Fiji": rum pancakes with coconut cream! My recipe and I borrowed on the Islands in Fiji, coconuts are served and cocktails, soups, salads, and desserts!

Ingredients

  • Coconut

    1 piece

  • Coconut shavings

    3 Tbsp

  • Cream

    150 g

  • Yogurt

    500 g

  • Cheese

    200 g

  • Chicken egg

    3 piece

  • Flour

    300 g

  • Vegetable oil

    2 Tbsp

  • Sugar

    6 Tbsp

  • Leavening agent

    1 pack

  • Raisins

    50 g

  • Rum

    50 g

  • Liqueur

    50 g

Cooking

Mix all the ingredients for the dough + raisins, pre-soaked in rum. (You can quickly "pickle" raisins in a microwave oven: it is filled with rum and place in the oven covered dishes for 2-3 min). Bake in a pan pancakes (light Browns). I baked on low heat under the lid, then the faster they rise, and baked.

Whip the cream with a small amount of sugar (a couple tablespoons). Add coconut and, if desired, egg liqueur (for kids syrup, orange juice, syrup of buckthorn)
