Eggplant layered
Very hearty, tasty and healthy dish. Quick to prepare. Help yourself!

Ingredients

  • Eggplant

    2 piece

  • Tomato

    3 piece

  • Onion

    2 piece

  • Carrots

    3 piece

  • Vegetable oil

  • Spices

  • Parsley

    3 Tbsp

Cooking

Eggplant washed and cut into lengthwise slices.

Each slice and fry on both sides.

The tomatoes and finely chop the onion. Carrots grate on a grater. Chopped vegetables to put in VOG (or deep pan) and put out. About 10 minutes.

Add dried parsley, salt and pepper. Stir and let stew a few minutes.

In a fireproof dish put a layer of eggplant slices and steamed vegetables. Cover and place in oven for 10-15 minutes. Then allow to cool.

Serve cold with any vegetables. Bon appetit.
