Eggplant with nuts

Ingredients

  • Eggplant

    4 piece

  • Onion

    1 piece

  • Vinegar

    2 Tbsp

  • Parsley

    0.5 coup

  • Garlic

    2 tooth

  • Walnuts

    0.5 cup

  • Salt

  • Black pepper

Cooking

Cut eggplant into slices, season with salt, let stand for 10-15 minutes.

Rinse under running water, dry with a napkin.

Fry in vegetable oil.

Put on napkin to soak up excess fat. Or bake in the oven. Prepare the filling one small onion cut into half-rings, scalded with boiling water, mix with 2 tablespoons of vinegar. ½ Bunch parsley finely chop one clove of garlic, finely chop.

Half a Cup of walnuts and other mentioned products (except the eggplant), fold in a food processor and grind.
