Cold caponata
I'm sure many are preparing this appetizer, although this dish is easy to make, I still decided to add it to the site, even if ugly, but very tasty :) .

Ingredients

  • Eggplant

    2 piece

  • Salt

  • Mayonnaise

  • Parsley

  • Garlic

    1 tooth

  • Vegetable oil

Cooking

Chop the eggplant and season with salt from both sides, leave aside to drain the bitterness.

Heat the oil and fry them on both sides of the dried paper the eggplant slices(to prevent oil spray)

Spread the fried pieces of paper to soak up excess oil. And, while the eggplant cools, prepare the sauce: mix the mayonnaise, chopped parsley and garlic.

Laying out layers of eggplant on a wide dish, spread each piece on top.

Recommended as a sandwich on rye bread, although from the plate, a bit of sugar is also not disgusting :)
