That's what we need, except butter. Oil is a matter of taste: corn, sunflower or what else. I have refined sunflower.
Cut peppers lengthwise and gently scrub the core and seeds. I managed with a spoon.
Mozarella cut into slices and "fills" it peppers. The denser, the better.
Prepare a batter. Beat the egg with the sparkling water. (Gas will give the batter an extra swing). Mix with cornmeal. Consistency the batter is easy to check with a spoon: dip, if the batter "served" on a spoon evenly and almost does not flow, then this is a great batter. If watery - add the flour, thickish water.
Heat oil for deep frying. I have a deep fryer there, and because I use a saucepan with thick walls. While oil heats, roll the peppers in flour to make the batter stick.
Drop it into boiling oil and fry until Golden crocky. Five minutes (+/-).
Ready catches peppers with a slotted spoon and vykladyvaem on a napkin to stack the excess fat.
