Vegetable trio with a mousse of roasted eggplant
Participants of our past culinary competitions made their conclusions. Again, you gathered together in the kitchen to re-fight. Someone want to confirm the title of our little company, someone wanted revenge. And so, I present to your court new second cook. First dish: Vegetable trio with a mousse of roasted eggplant "Three on the plate, not counting Fetaki"

Ingredients

  • Zucchini

    300 g

  • Eggplant

    300 g

  • Pepper

    200 g

  • Cherry tomatoes

    200 g

  • Feta

    400 g

  • Cilantro

    10 g

  • Vegetable oil

    30 g

  • Garlic

    10 g

  • Basil

    2 g

  • Thyme

    2 g

  • Mushrooms

    200 g

Cooking

Prepare all the ingredients.

Eggplant and peppers, cut lengthwise, lubricating oil, and sprinkle with Basil and garlic and bake until tender.

Zucchini cut into rings 2 cm thick, cut out the recess. The mushroom remove the stem.

Fry the mushrooms with thyme.

Fry the zucchini.

Bring to readiness the vegetables in the oven and allow to cool.

Zucchini and mushrooms cut into dice.

Fry the zucchini and mushrooms. With roasted pepper and eggplant remove the skin.

Cut everything in small cubes and stir.

Feta, roasted eggplant, garlic and cilantro blend until a homogeneous mass.

The consistency should be homogeneous otherwise ill will be squeezed.

The cherry tomatoes remove the seeds and the resulting mass stuffed with cherry tomatoes.

Also stuffed with zucchini and mushrooms.

Spread on top of vegetables.

On top you can garnish with remaining sauce, roasted peppers or feta cut into small cubes.
