Vegetable salad with lentils and vegetables
My colleagues at work a birthday in late March. Every year on this day she sets the table, composed entirely of very interesting vegetable salads and snacks. This time there were 5 options of treats, one of which I share with you!

Ingredients

  • Lentils

    100 g

  • Couscous

    50 g

  • Red sweet pepper

    1 piece

  • Carrots

    1 piece

  • Arugula

    50 g

  • Green peas

    50 g

  • Broth

    50 ml

  • Soy sauce

    2 Tbsp

  • Lemon juice

    1 Tbsp

  • Olive oil

    2 Tbsp

  • Salt

  • Pumpkin seeds

    2 handful

Cooking

Boil the lentils in salted boiling water according to the instructions on the package (took me about 20-25 minutes). Cool.

Couscous pour boiling salted broth, leave until completely absorbed, stirring occasionally with a fork, so grits do not stick together.

Carrots and peppers to RUB on a large grater, mix, add juice of lemon and soy sauce.

Peas blanch in salted water for 2-3 minutes, cool.

Mix the lentils, carrots, pepper, peas and arugula. Season with olive oil, sprinkle with pumpkin seeds.
