Salad
I think many familiar classic American salad, the Waldorf (Waldorf) - tasty, fresh, pleasant and easy to prepare. What if to bring some flavor to the salad, which will give the dish an interesting touch and texture? Go for details to visit! (Idea taken from chef Graham Campbell.)

Ingredients

  • Vinegar

Cooking

Grapes cut in half and place in dehydrator for 24 hours at 66 degrees. To facilitate the task: to have the fruit crisps Grapes (which I actually did).

40 g of nuts dry on a dry pan or in the oven until Golden brown. Allow to cool.

To caramelize the nuts: In a saucepan heat the sugar light caramel, add 20 g of roasted nuts and mix thoroughly. Spread on greased foil or parchment, and let cool.

Celery cut into small pieces.

Mix white wine vinegar, water, white wine and sugar and bring to a boil, pour over the celery and allow to cool at room temperature. The marinade to drain.

Apple peel and core and cut into thin slices. Grate cheese on a fine grater.

The cooled caramelized nuts RUB on a small grater.

On a plate put lettuce. Put the Apple and celery, sprinkle with oil and put a little yogurt. Add grapes and roasted nuts. Sprinkle with grated cheese and crushed caramelized nuts. Salad can be decorated with caramel threads.
