Cookies with dried apricots and yogurt
Recipe from an old issue of the magazine "Gastronom". Tender cookies with apricot taste. While they baked, the kitchen was so amazing apricot smell that I immediately wanted warmth, sunshine, summer, fresh apricots

Ingredients

  • Dried apricots

    150 g

  • Yogurt

    250 g

  • Flour

    1.5 cup

  • Almonds

    30 g

  • Leavening agent

    1 tsp

  • Sugar

    140 g

  • Vegetable oil

    3 Tbsp

  • Oat flakes

    1 cup

Cooking

Almond clear from the skins (pour for 2 minutes with boiling water, drain and the skins are easy to clean) and grind in a blender. Dried apricots to soak in hot water for 15 minutes, drain the water and grind in a blender. In a bowl, mix the flour, 100g sugar, baking powder, oat flakes and ground almonds

Yogurt (I had ACTIVIA, 2 pots of 125 g)lightly whipped with vegetable oil. Then add to the dry mix yogurt and chopped dried apricots

Knead the dough

On a baking sheet to put baking paper, moisten it with water. Wet hands to form dough balls and place on baking sheet. Makes 20 pieces

With a fork to flatten the balls to get these cookies

Each cookie is dusted with sugar. Somewhere between 0.5 tsp per 1 piece

Put in a preheated 190 degree oven for 20 minutes. Ready!
