Out of the water and Demerara sugar to boil the syrup, boiling for 1 minute over medium heat. The syrup cool down completely to speed up the process I'm doing on the ice. If You add warm syrup, you get granite with a taste of pickled cucumbers.
With lime to remove the zest and squeeze the juice.
Cucumber peel and grind in a blender with mint.
To combine the cooled syrup, the juice and zest of lime, cucumber mass. Transfer to a container and put into the freezer for a couple of hours. If granite is intended only for adults at this stage you can add a little rum. Get granite-style Mojito.
When the surface crust is formed, break it with a fork. The container back in the freezer.
Repeat this step two or three times, until the ice chips.
Spread on chilled glasses and serve immediately.
