Fruit waffle cookies
I really wanted to bake something interesting, but the Internet was not working, so I had to improvise: took something from one recipe, then another, and the result is tender and juicy cookies with a pronounced fruity-nutty flavor.

Ingredients

  • Dried apricots

    180 g

  • Nuts

    100 g

  • Honey

    1 Tbsp

  • Chicken egg

    6 piece

  • Flour

  • Butter

    200 g

  • Cinnamon

    0.5 tsp

  • Salt

  • Sugar

    0.5 cup

The cookies will be double layer as the lower layer are waffles. If You don't have the time or the waffle iron, you can use ready store-bought waffle plates, but I still recommend to make waffles themselves. This eggs is good to mix with sugar, add melted butter, flour, sugar and cinnamon. Knead homogeneous dough consistency like thick cream. Immediately warn that the cookies will last us half portions of the dough, but the rest of the wafer can be easy to eat, my kids never miss a chance to eat them.

Bake in a waffle iron (I have it more Soviet-style) waffles. On the lower surface, spread 1 tbsp of dough and close waffle iron and wait about 2 minutes until the waffles will be light Golden brown. From such a number of products I got 23 waffles, about 13-14 cm in diameter.

Going to do a fruit test. For this, we need dried apricots, which should be washed and dried. I had just dried apricots, so I pre-soaked them, and then water was decanted.

So, apricots, along with nuts (I used walnuts) mince, add the flour, honey and egg. If you are using, as well as I, dried fruits, you can add 1 tablespoon of sugar. All mix well until smooth. Fruit the dough is ready. Honestly, at this point, after tasting the dough to the sweetness, I was drawn to stay and eat it just like that. Stopped only part of the raw egg.

Now on each waffle, spread a layer of fruity dough (1 tbsp.) with a thickness of about 0.5 cm.

Cut each waffle into 4 pieces. Harvesting our cookies are ready.

Spread on the baking sheet (grease is not necessary) and send in a preheated 120 degree oven. Bake for approximately 40-45 minutes at the half-open door.

During baking the fruit filling is slightly darkened, and the waffles will become more crispy.

After cookies have cooled, it can be sprinkled with powdered sugar. Biscuits turns out very soft with light fruity acidity, a touch of nut and cinnamon. Immediately after cooling, the wafers are crispy, but after a couple of hours they become soft (but not crawl).
