Cooking
Slice the meat into serving pieces and Pat dry with paper towel.
Onion cut into half rings of medium thickness.
Carrots cut into plates. Also not very subtle.
Sift the flour to avoid lumps.
On the bottom of the pan for frying put the onion rings and slices of carrots.
Roll meat in flour, shaking off excess. There should be only a light flour "frosting".
Lay the pork on top of vegetables and
stew the mixture slightly. Not roast!
Pour in the wine. Bring to boil and diminished the fire to simmer under closed cover for 40-60 minutes (depends on what you have the pieces). Constantly stirring, (to all the pieces languished in wine) every 10 minutes. Need to put out until soft to the fork easily included. For 10 minutes and season with salt and pepper.
When pork is ready, remove the meat to a plate and into the liquid add a teaspoon of flour and a little boil, so the sauce thickens.
Grind the egg yolks in a separate bowl. In another pour the breadcrumbs.
Dip each piece of meat in the egg yolks,
and then in the breadcrumbs.
Fry the pork in vegetable oil on both sides until Golden brown.
Prepare a serving dish, garnish the edges with parsley (this is optional).
Put the meat in the middle of the plate and
pour wine sauce with vegetables. Bon appetit!
