Cooking
The eggs boil hard boiled. While cooking, squeeze the juice of beets. Of the three small Sokolok I got that amount of juice. I added a little water to get a full glass.
Now prepare the marinade. In a small pot or saucepan pour the beet juice, vinegar, add sugar and spices. Bring to a boil. Shoot.
Boiled eggs peel, put in a suitable container and pour the hot marinade. Let it cool down completely, and then refrigerated 4-6 hours.
After cooling, drain off the marinade and cut the eggs in half, put the yolks in a separate bowl.
To the yolks add the horseradish, onion, parsley, mayonnaise, seasoned with salt, pepper and sugar to taste.
Stir and fill the halves of eggs.
Decorate with grated fresh horseradish and parsley.
