Buckwheat pancakes with eggplant
Dear friends! Today we have pancakes on buckwheat flour with roasted eggplant. They are prepared quickly, out very flavorful and delicious.

Ingredients

  • Buckwheat flour

    170 g

  • Chicken egg

    1 piece

  • Vegetable oil

    2 Tbsp

  • Salt

    0.5 tsp

  • Soda

  • Sugar

    1 tsp

  • Milk

    300 ml

  • Eggplant

  • Cilantro

    0.5 coup

Buckwheat brand Mistral grind in a coffee grinder into flour.

In warm milk add the egg, salt, sugar, baking powder, vegetable oil. Beat well with a whisk.

Bake eggplant on a gas hob (it will not take much time), clean, blend it in a blender. Add in the milk, buckwheat flour and mashed eggplant.

Add chopped cilantro (if you don't, skip this step)

Bake pancakes in a small frying pan with 2 sides, each time greasing the pan with oil.

Serve pancakes with sour cream or natural yoghurt (I also add garlic, pepper and herbs). Bon appétit!
