Sautéed eggplant
Recently tried the sautéed eggplant and just fell in love with this recipe. Eggplant lovers join.

Ingredients

  • Eggplant

    4 piece

  • Onion

    1 piece

  • Carrots

    2 piece

  • Pepper

    2 piece

  • Tomato

    4 piece

  • Garlic

    4 tooth

  • Greens

  • Vegetable oil

Cooking

Eggplant cut into slices with a thickness of 5 ml salt and allow to stand.

Onions and peppers cut into half rings, tomatoes in large cubes, carrots to RUB on a large grater. Mix well.

Saute the vegetables in vegetable oil, salt.

Eggplant, lightly rinse and squeeze. Fry each slice on both sides in vegetable oil.

Ready eggplant add to the pot, they put the roasted vegetables, then chopped garlic and chopped greens. Cover with lid, place on a very quiet heat, and simmer 10 minutes. Ready sauté mix.
