Cooking
Preheat the oven to 180 - 200 gr. Grease a baking sheet. In a saucepan over low heat connect the sugar and 1/4 Cup cold water. Heat, stirring, for 5 minutes until the sugar is dissolved.
Increase heat, bring syrup to a boil and let simmer 5 - 7 minutes (without stirring) until light Golden brown.
Quickly add the zest, chilli and nuts. Mix thoroughly.
Spread nuts on baking sheet in a single layer. Place in the preheated oven for 5 - 7 minutes.
Remove from the oven when the caramel is bubbling and the nuts are Golden. Let cool slightly. Remove the nuts from the pan when the caramel is still warm and sticky. When the caramel hardens, the nuts will not tear. If it happened, do not despair, just place the pan in the oven for a few minutes so the caramel is melted again.
If you are going to serve nuts at once, you can store them in a tightly sealed container, proclaim baking paper, up to 3 days.
Serve nuts, cheese and pears. Bon appetit!
