Cooking
To start soak the beans for at least 4 hours. So it will cook faster and be softer.
Boil beans until tender 1.5-2 hours. Add salt at the very end of cooking, because salt inhibits the cooking of.
Cut the onions and leeks. In a pan melt the butter and fry the onions and leeks on low heat for about 15 minutes, until the onions are soft.
On top of the onions gradually pour in the flour and pour the milk.
Stirring constantly, bring to a boil.
Add beans. Continuing to stir, cook for another 3 minutes. Add salt, pepper, add thyme.
Put everything in a fireproof dish and bake for 10 more minutes in the oven.
