The original had salted salmon (the author says that it gives saltiness to the pancakes and the desired flavor), but I it was not. But there was a piece of fresh salmon. I've cut it into small slices, salt and pepper and put aside a couple of hours aside.
Melt the butter, add two egg yolks, sugar and a good stir.
The drain. butter egg yolks sift the flour. Stir.
Beat the whites with the salt.
In the dough, gradually pour in the buttermilk and stir to no lumps. Add the whipped whites and gently stir.
Greens finely chop. I had green onions and dill.
On a heated pan put the slices of salmon. In the original, the author sprinkled the herbs into the pan. I tried one pancake, I didn't like (greens are very priaries). So the next pancakes fried without greenery.
Pour the batter and fry on low heat for 5-7min.
But this step for me was the most difficult. You need to carefully flip the pancake (I have not rolled over and exploded), cover and over low heat bring to readiness for another 5-7min. Of this amount, the test I got six pancakes.
