Quinoa with pesto and marinated shrimp
This dish can be attributed both to the appetizer and salad. Unusually fragrant fried shrimp, served with quinoa mixed with pesto sauce. This is a very tasty, healthy and unusual!

Ingredients

  • Shrimp

    24 piece

  • Quinoa

    250 g

  • Garlic

    1 tooth

  • Shallots

    0.5 piece

  • Paprika sweet

    0.25 tsp

  • Thyme

    0.25 tsp

  • Olive oil

    250 ml

  • Basil

    1 coup

  • Parmesan

    2 Tbsp

  • Pine nuts

    1 Tbsp

  • Arugula

    50 g

  • Salt

  • Black pepper

Prepare the pesto. Garlic clean, wash Basil, Pat dry. Pine nuts dry on a dry pan. In the bowl of a blender combine: 1/2 clove of garlic, Basil, nuts, Parmesan. Grind.

Pour portions of 100 ml. of oil. Grind.

Shrimp clean, dry. The onion and the remaining garlic, finely chop and add to shrimp. Add spices, 2 tbsp oil, season with salt and pepper and leave to marinate for 30 minutes.

Rinse quinoa, boil according to instructions on the package. I took quinoa TM Mistral. Mix the quinoa with half of the pesto.

Fry the shrimp in the marinade for 8 minutes.

Finished shrimp served with quinoa with pesto, sprinkled with arugula. Bon appetit!
